Adding Coke® to the batter makes these crepes extra fluffy and light. Served with fresh fruit, they make a great Sunday brunch treat.

SERVES 6

For the crepes
Scant 1 cup (110 g / 3¾ oz) all-purpose (plain) flour
a pinch of salt
2 eggs
scant 1 cup (200 ml/7 fl oz) milk

 cup (75 ml/3 fl oz) Diet Coke®
4 tablespoons (50 g/2 oz) butter, for cooking

 

FOR THE SYRUP
scant 1 cup (200 ml/7 fl oz) Diet Coke® 
grated zest of ½ lemon

 

TO SEVRE
a selection of fresh fruit or berries
Greek yogurt or creme fraiche

 

Adding Coke® to the batter makes these crepes extra fluffy and light. Served with fresh fruit, they make a great Sunday brunch treat.

Sift the flour into a bowl with the salt. Make a well in the middle and crack in the eggs. Beat the eggs using a whisk, then gradually incorporate the flour from around the edges of the well. Combine the milk and Diet Coke®, and when the batter is starting to look thick, add a little of the milk mixture to the well. Keep going with this process until you have whisked in all the milk mixture and you have a nice smooth batter. Cover and let sit in the refrigerator for 30 minutes.

 

For the syrup, place the Diet Coke® in a pan and simmer for 8-10 minutes, until you have a glossy syruo; be careful, because it can quickly evaporate. Mix in the lemon zest.

 

To cook the crepes, put a small skillet or frying pan on the stove (hob) and melt a small piece of butter. Ladle in some batter and swirl it around the pan. Cook for 2 minutes or until lightly golden, then turn and cook the other side for 1-2 minutes, until gloden. Repeat until all the batter has been used.

 

Top with fruit and yogurt, drizzle with the syrup, and serve
