Adding Coke® to the batter makes these crepes extra fluffy and light. Served with fresh fruit, they make a great Sunday brunch treat.

SERVES 6

2½ -lb (1.25 -kg) chicken, rinsed 

2-3 leafy celery tops. 
3 tablespoons (40 g/ 1½ oz) butter or margarine
1 tart apple, peeled and diced
1 onion, thinly sliced
1 tablespoon curry powder (or to taste)
⅓ cup (50 g / 2 oz) raisins
½ cup (125 ml / 4 fl oz) Diet Coke®
3 tablespoons (25 g/1 oz) all-purpose (plain) flour
1 cup (250 ml/8 fl oz) canned coconut milk
salt and white pepper

 

TO SERVE
freshly cooked basmati or other long-grain rice
grated coconut, chopped peanuts, chopped onion, raisins, or chopped fresh cilantro (coriander), for sprinkling on top of each serving
chutney, corn relish, and/or lime wedges

 

This dish is best made the day before to allow fot the flavor to develop.
Put the chicken into a large saucepan of salted boiling water with the celery tops. Cover and simmer for 1 hour or until the meat is tender and the juices run clear when pierced in the thicket part with a sharp knife or skewer. Drain through a strainer or sieve, reserving the strained stock. Remove the meat from the bones and cut so you have 3 cups (375 g/12 oz) of ½-inch (1 cm) pieces (use the leftovers for a stock) 

Melt the butter in skillet or frying pan. Add the apple, onion, and curry powder and saute for 5 minutes. Stir in the raisins, 1 cup (250 ml/8 fl oz) of the reserved stock, and the Diet Coke®.

Mix the flour with the coconut milk a little at a time, stirring until smooth. Add this mixture to the oniion-and-apple mixture and season with salt and white pepper to taste. Stir and cook over low heat until thick and creamy. Add the cooked chicken meat and transfer to covered container. Chill in the refrigerator overnight

Reheat slowly in a large saucepan until heated through. Serve with freshly cooked basmati rice and a selection of garnishes
